The Dessert Chef in Me: Banana Muffins


To make a good muffin one wants them to be moist.  So here is my banana recipe.  All you will need are the following:

4 large ripe bananas
1/2 cup white sugar
1 egg
1/3 cup olive oil
1 cups all-purpose flour and 1/2 of cup of wheat flour, 1 cup of chocolate chips
1 tsp baking soda, 1 tsp baking powder, 1 tsp of vanilla and 1 tsp of nutmeg


6 tbsp of flour
6 tbsp of brown sugar
1 tsp of cinnamon
6 tbsp of butter melted
paper muffin liners
muffin tins

Now you have to take the bananas and sugar put them into a mixing bowl I like using a KitchenAid mixer and mix them until creamy.  Then add egg, and oil, mix until creamy. Then add baking soda and powder, add vanilla and nutmeg, add chips and finally add flour mix well.

Get your muffin trays put in liner in each tray spray the top of the muffin tins where the liner doesn’t go with cooking spray.  This recipe will make 12 muffins.  Now fill the muffin compartments half way.  If you like walnuts then take 3 to 4 walnuts per compartment, break them up and put them on top of the filling then fill the muffin compartments up to the top of the muffin tray.  Take 3 to 4 more whole walnuts per compartment and break them up and put them onto of the muffin.

Now in a separate bowl mix crumble topping ingredients together until the mixture resembles coarse crumbs.  Then spread onto of the muffins.

Bake 20 minutes at 375 now you need to test to make sure they are baked as everybody oven is different so insert a toothpick to make sure muffin mix is baked.  You might need to leave in for a bit more.  Enjoy.
