A Simple but Elegant Tomato Sauce With a lovely meat sauce on the side


2 tbsp. of olive oil

1 onion diced

3 garlic cloves finely diced

1/4 cup of vodka

1/4 cup of white wine

4 cups of diced fresh tomatoes (If not fresh then you can use can tomatoes 2 x 28ozs)

1 tsp of brown sugar

good handful of either parsley plus about 10 large leafs of basil or other spices if you want a change see note below

1 cup of veg broth or chicken broth, or beef broth (beef gives it a richer taste, chicken is delicate and veg allows the tomato to stand out)

a dash of pepper

two small cans of tomato paste

1 cup of whipping cream if you want a creamy sauce

Note for spices: If you want a change you can use different spices, like oregano, thyme, cayenne pepper

If you like a creamy sauce which I did today add a cup of whipping cream to the sauce at the end.  If you want a hot sauce then leave out the other spices and keep the cayenne pepper and black pepper with the cream.


So on medium heat, add the oil, onions, brown sugar and garlic sautéed for about 5 mins, then add the diced tomatoes and simmer for 15 to 20 mins, then add the wine and vodka, give it 10 mins to simmer before adding the broth.  Cook pasta and when ready to serve add in the tomato pasta to sauce, once all mix add in the cook pasta.  Mix well and add two cups of the water the pasta was cooked in into the mixture, mix well before serving.

You can also add a meat sauce on top that we did today.

Meat Sauce:


1 lb of ground beef and pork

1 egg beaten

2 tbsp. of olive oil

a dash of pepper

1 garlic diced

half of an onion chopped

2 tbsp. of flour

1/2 cup of red wine

3 tbsp. of cream cheese (this time I used a flavour one with basil)

handful of parsley

2 tsp of thyme

1/2 cup of beef broth


On medium add the oil, onions and garlic sautéed for 5 mins, then add the meat and cook until well cooked, then add pepper, thyme, beef broth, egg and mix well.  Cook for 10 mins.  Then add red wine and beef broth cook for another 10 mins and when ready to serve add the flour and mix well give it a min or two to thicken and then serve on top of the pasta.20180416_184104_resized
