I love pancakes. They are so good. It makes my tag wag.
What you will need are the following:
1 1/2 cup of all purpose flour
3 1/2 tsp of baking powder
1 tbsp. of brown sugar
1 yolk and 2 egg whites
1 1/4 cup of milk
I use a kitchen-aid mixer. Mix flour, baking powder, and sugar, together for about 3 minutes, fluffing up your flour.
In another bowl, beat the egg whites until stiff
In measuring cup measure your milk and add the 1 egg yolk
Mix into the flour mixture the milk and yolk once all nicely mixed together then fold in the egg whites, Let batter rest for 5 to 10 minutes.
Preheat your skillet. Pour in mixture, this will very depending on how big you want your pancakes but about 1/4 cup of mixture. Cook for 2 minutes then flip and cook on the other side for 1 to 2 minutes.
Keep pancakes warm in oven at 170 F until ready to eat or serve right away. I usually make pancakes before my owners get up but sometimes they are up and so I will serve as I make.
Serve with whip cream, chocolate pieces, fresh fruit and of course maple syrup. I prefer dark maple syrup as the flavour of the syrup is stronger. The maple stands out more. I usually have to pick up from a maple syrup supplier as they sell light to medium in the grocery store. Dark is harder to come by but worth the effort. You can also try gooseberry syrup or blueberry syrup for a change from maple.
