Colonial Innkeeper’s Pie

Ingredients:

Sauce

2 squares of semi sweet chocolate

1 tbsp. of Dutch coco

1/3 cup of sugar

1/4 cup of butter

Batter:

1 cup of flour

1/2 cup of sugar

1/4 cup of grapeseed oil

1/2 cup of 2% milk

1/2 tsp of vanilla

1 tsp of baking powder

1 egg

Pie crust, I use a store bought pie crust, put into pie dish, bake if you like crunchy crust, if not then leave the way it is but put wholes in pie crust with a fork.

Make batter, put flour, sugar and baking soda into a mixing bowl, mix for about 5 minutes, in measuring cup put milk, oil, vanilla and egg.  After 5 minutes are up, pour slowly the liquids into the flour mixture. Combine well, it will be dense and sticky like dough.

Take batter and put into the pie crust, spread out.

Then make sauce, put all ingredients into a pot, put onto stove on medium stir constantly until melted, then bring to a boil and turn off, let cool down.

Preheat oven to 350 F.

Once cool pour sauce over the batter.  Then put into the oven and bake for 55 to 60 minutes or until tooth pick stuck in centre comes out clean.

Enjoy.  Best pie ever.
