3 cups of flour
3/4 cup of milk
Put the flour into bowl, I use a kitchen aid, then beat for 5 minutes, measure your milk and eggs, once flour beaten for 5 minutes, slowly add in the liquids make still it is running and smooth similar to pancake mix. That is the constancy you are looking for.
Note, you can prepare the flour mixture in advance if you do before you are ready to pour into tin make sure that for at least five minutes you beat the mixture then you can pour into tin.
Preheat oven to 450 F. Place oil into muffin tin, heat it up, so you can leave in the oven while it preheats and once oven is ready then take tin out but be careful as oil will be very hot, then add pudding into the tin. Put the tin back into oven and bake for about 20 to 25 minutes until they have puffed up, and are a crisp light brown.
