Mexican Anybody, Fast and Easy: A Complete Meal, It Will Make You Look Great!!!!

These days you need a simple easy but enjoyable nice tasting meal.  A meal that satisfies.  A meal that others think you struggled over but you really didn’t.  So with all my humans out and only me home, I knew what they would like upon their return.  At some point when they get home they will be very hungry and looking for something to eat but tired, no energy to make themselves anything.  So I decided to do Mexican, they could warm it up,  but I too wasn’t feeling like spending a lot of time in the kitchen.  So I developed this simple easy meal.

So some of my humans like fish, some meat and some are vegetarian.  Thus I decided to do all three for this meal.  I started with an appetizer.  This is the only part that can’t be made ahead and needs to be made just a bit before they return home.

Nacho’s

Ingredients:

Taco chips, I use Kirkland brand, not too salty and a nice corn taste to them.

Diced peppers I use red as they are sweet but you can use any colour you like.

2 diced Spring onions

Salsa

Sour Cream

Grated Cheese

Directions:

The amounts will vary.  So I get a large baking dish if it was for a lot of people but right now we are just making it for 1 person so I take a small baking dish for one person.  Thus for a large group you would have to change the amounts to fit the number of people you are planning on serving.

Fill your baking dish with chips, so a handful or two,  grate cheese to cover a decent amount of cheese, then add the peppers and diced spring onions, finally put it into the oven at 375 and bake for about 5 to 7 minutes until cheese is bubbly and melted, then remove .   You don’t want it burning or getting black so keep and eye on your chips.   Once out of oven.    Now add salsa, a good amount spreading it out, and finally add a large dollop of sour cream on top.

If you happen to have fried black beans in a can then you can add this as well but that would have to first before the peppers and onions.

Main meal:

Get another baking dish, I also use a small one, so I have three small baking dishes, one with a serving of trout in it without it’s skin, one with chicken in it without bones or skin, the other with a helping of tofu I use medium to hard tofu.

Ingredient:

1 serving of fish, 1 serving of chicken, 1 serving of tofu

3/4 cup of white wine, a nice dry wine white with strong flavour is preferred

5 tomatoes small, diced the tomato remove the seeds.

Grated cheese I use a strong cheddar but you can use whatever you like.

This is the bake chicken dish. The fish and the tofu ones will look similar.

So place the fish, the chicken and the tofu into their baking dish, then pour 1/4 white wine over top of each item, ie, the chicken, the fish, the tofu.  Now using your pepper mill grind some pepper over each one, then add diced tomatoes over each dish.  Bake at 375 for about 20 minutes or until chicken, and the fish are cooked.  Once cooked remove add grated cheese on top covering the fish, or chicken or tofu use a decent amount.  However, you can use as much as you like.  So if you like your food really cheesy then add lots.  Now return baking dishes to oven until cheese is melted and bubbly.  Set aside in a warm oven around 150 to 170 in temp.  I happen to have two ovens.  If you don’t, then at this point, turn off and leave it in the oven until the next part is ready.  But make sure to cover the baking dishes so they don’t dry out.  You can use tin foil.

Now the last part is making Mexican rice.

Ingredients:

2 cups of rice

1/2 onion diced

2 garlic cloves finely diced

1 carrot diced

1 pepper diced

1 celery stalk if you have diced

a cup of corn or I use 2 fresh corn on the cob, but you have to cut the corn off the cob.

1 tbsp. of olive oil

1 pkg of fajitas spice I use President Choice

4 cups of water

dollop of sour cream

dollop of salsa

Now, get a large pot, I put a tbsp. of olive oil in and heat to medium add the onion, garlic and carrot fry sautéing for about 5 minutes, then add the pepper, celery and corn, continue to cook for about 2 minutes, then add the pkg of fajitas spice mix well about 1 minute, then add the two cups of rice stirring until all the rice is covered about 1 minute, then add the 4 cups of water, turn up to high, once it boils put lid on and turn down to low.  I turn my stove down to 1.4.  It will take between 20 to 30 minutes for your rice to be ready.  It is also best to wash your rice by putting in into a sieve and running water over the rice until the water is running clear.

 

 

When ready to serve put a good helping of rice on dish, then put the chicken, or fish or tofu on top of the rice including the wine liquid that should be surrounding the meat or plant protein.  Then put a good size dollop of sour cream on top of the meat or plant protein, and then put a good size dollop on top of the sour cream.
