Roasted Cashews or any nut

It is cheaper to roast your own nuts.  So I have my owner buy unsalted nuts, cashews or walnuts, almonds, pine nuts.  Use a bland oil like grape seed or safflower oil, or this time I used maple syrup so the nut had a sweet taste to it.

Preheat oven to 350 F

Take large baking pan with sides, line with parchment paper or use a baking liner.  In a large bowl take 1 1/2 kg of nuts and mix it with your liquid, so in the case I used maple syrup, 1/2 cup, making sure that all the nuts get covered.  If you like your nuts spicy add,  a 1 tbsp. of hot spice or other types of spices that would go nice with the flavour of the nut depending on what you like.  If I am adding a spice then I use oil vs maple syrup as maple syrup will sweeten your nut.

Then spread out onto baking sheet and put into oven.  Bake for 5 minutes then take out and stir, put back in and bake for another 5 minutes, then turn oven off and let the nuts cool in oven however, make sure you stir from time to time.  The nuts should brown up as they cool down.
