Banana Bread

We are planning on making Banana French Toast so of course I had to come up with a Banana Bread recipe.  This came out so moist and delicious.  Enjoy.

1 1/2 cups of warm water

2 mushed bananas

3 tsp of dry yeast

2 Tbsp. of brown sugar

2 tsp of cinnamon

1 Tbsp. of Vital Wheat Gluten

4 cups of all purpose flour, so might need 1/2 cup more depending but you can add until your ball is smooth and not to sticky.

In my kitchen-aid I put my warm water, brown sugar, mushed bananas and yeast.  Let sit for 5 minutes, then add flour, cinnamon and wheat gluten and mix into a ball, continue to knead for 8 minutes adding a little extra flour until your dough is not sticking to sides of bowl and has formed a nice ball.

Get a large bowl, spray the bowl with oil, put the dough into the bowl, cover with plastic wrap and place in warm oven.  I warm my oven at 150 in advance while creating the dough, when I put the dough in the oven I turn of the oven and leave dough in the warm oven for 35 minutes.

Then remove from oven and knead for a minute.  Divide dough into two equal parts and put into bread pan or a baking pan that can go into oven and place into oven, let it rise for an hour and 10 minutes in warm oven, make sure you cover your bread dough with plastic wrap.

Remove from oven, preheat oven to 350 F then place dough back into oven and cook for 25 minutes.  Take out after 25 minutes and transfer to racks to cool.  Enjoy.
