I just love almond cookies from a good Chinese bakery. They make the best almond cookies. So I have decided to try and create the delight.
3/4 cups of olive oil
1/8 and a half of sugar
1/2 tbsp. of almond extract
1 drop of yellow dye
1 1/3 cups of all purpose flour
1/8 of baking soda
1/4 cup of sliced almonds
1 egg lightly beaten
In my kitchen aid I put the oil, sugar, egg, almond extract 1 drop of yellow dye. Cream together, once creamed add the flour. I add 1/3 cup at a time mixing well. You might need to add a little extra at the end to get the dough just right. So the dough should not be sticky, it should form a nice ball, it should be soft but a bit rough as it has nuts in it, it should remind one of bread dough. So knead the dough for a minute or two then put onto a large piece of plastic wrap and shape the dough into a long chuck, making it as even as possible and smooth. Once you have the shape you like then wrap it and place it in the fridge for at least 3 hours.
In the meantime preheat the oven to 375. When ready take the dough out and cut into 1/4 thick slices. Similar to Pillsbury dough cookies. Place the cookies onto your baking sheet that is on a baking tray and put the tray into the oven. In the middle of oven. Just before you do this brush each cook with the beaten egg. Then cook for about 10 minutes. They should be golden brown, enjoy.
