Moist Banana Loaf

Well, we are into banana type breads right now as my owners want me to try and recreate a breakfast.  A breakfast they got to experience when they went to a resort called Emerald Lake Lodge in BC, Canada.  A gorgeous place for a romantic get away, or in their case they were there for a wedding.

At the restaurant in the Lodge they were offer Banana French toast.  So for them, I’m going to try to recreate that breakfast for my owners and so I’m going to use both our moist banana loaf and our banana bread to make this breakfast.  Here’s hoping I do a great job.  So far, the breads taste wonderful.  Very yummy.  Woof, woof.


1/2 cups of all purpose flour

1 tsp of baking powder

1 tsp of baking soda

3 mushed bananas medium size

1/2 of buttermilk

1 tbsp. of lime juice

1/2 cup of olive oil

1 cup of white sugar

1 egg

1 tsp of vanilla


Using my kitchen aid, I put the mushed bananas in it, along with the buttermilk, olive oil, egg and vanilla, beat well until creamy.  Then add the lime juice continue to beat, then add the sugar continue to beat and cream.  Then add the baking powder and soda, mix well and finally add the flour mixing well.  Pour all into the loaf pan.  Put into preheated oven at 350 F.  Bake for an hour, then check if toothpick test comes out sticky then put back into the oven for another 10 minutes.  Remove, from oven let sit in pan for 10 minutes. Then flip out and let cool on rack.
