Spicy Sausage Pasta


6 hot Italian sausages

1 onion

3 garlic cloves

2 tbsp. of olive oil

1 tsp of fennel

1 tsp of rosemary

2 tsp of basil

1/2 cup of rose wine

1, 28 oz can of tomatoes diced

1 small can of tomato paste

handful of parsley

1 tbsp. of vinegar

1 carrot

2 handfuls of spinach



Put the tbsp. of oil into large pot.  Heat.  Dice up onions and add them to the pot.  Dice up the garlic and add them to the pot.  Cook for 6 mins, while cooking peel and dice the carrot.  Add the carrot to the mix and cook for another 6 mins.  Then add the spices, basil, fennel, rosemary and parsley.  Cook for a min and then add the vinegar and wine.  Simmer for another 6 minutes.  While this is happening cut up the spinach and then add it to the pot, plus remove the skin off the sausages and cut up into chunks and add it to the pot.  Cook for another 6  minutes.  Add the tomatoes and a dash of pepper and stir and let simmer.  Fill a pot with water and bring to a boil add your pasta and cook.  When your pasta is ready then add the paste into the sauce and stir until it is well mixed together.

Put the pasta onto a plate, top with sauce and Enjoy.  You can add some cheese on top of the sauce if you like
