Delicious, Soft Waffles

Hey, there are you looking for an easy waffle recipe.  Well, look no further.  This recipe makes 5 1/2 waffles.


4 eggs

2 cups of milk

1/2 cup of olive oil

3 tablespoons of brown sugar

1 tsp of baking powder

1/2 tsp of baking soda

1/2 cup of cornstarch

2 cups of all purpose flour


Mix the eggs, milk, olive oil and sugar together until smooth, then add baking powder, baking soda and cornstarch, it might be a bit lumpy but the lumps will come out was along as you keep beating, finally add flour and keep beating until all smooth, then continue to beat for another 5 minutes more.

While you are forcing air into your mixture preheat waffle iron.  About 2 to 4 minutes.

Once waffle iron is ready, then you can pour your waffle mixture into the iron and cook for 1 to 2 minutes.  I have my waffle iron on medium heat.  Each waffle iron will be different so you might need more or less time.  The best waffle iron we have own is Salton brand that flips upside down while cooking.  Great machine.

Once done either serve right away or if you live in a household like mine.  My people are slow to get up in the morning so cover with tinfoil and put into a warm oven.  But serve right when people get up.

We top our waffles with dark maple syrup, fruit like strawberries and chocolate chips.  If you want real decadence then serve with whipping cream as well.
