If you need good healthy but very tasty salad then this kale salad is the one for you. Take several leaves of kale. I use 6 to 10 large leaves. Remove the spine, wash the leaves. Pile them up, roll them to create a cigar shape and sliced it up into many long slices. You can cut them a few extra times to break them up and make pieces smaller so that they are not long stripes. Put the pieces into a bowl, take a salt grinder and grind some salt over the kale about 4 to 6 grinds, then using your hands toss the kale so to disperse the salt throughout the kale. Let rest for about 20 minutes. After the 20 minutes throw some almonds slices, dry cranberries pieces, some pumpkin seeds and some sunflower seed on top of the kale, mix it all up. Then toss with a lemon salad dressing. Sprinkle a few herb into the mix, I use lemon herb, parsley and a little tarragon about a tsp in total combined.
6 tablespoons of olive oil
and 2 tablespoons of lemon juice
Throw the dressing on and toss. Let stand for another 20 minutes before eating. This will last a few days dressed and it taste better if it first sits for a bit.
