I love ginger and in a cookie it is oh so good. Maybe not as great as chocolate but second best.
In a mixing bowl mix
1/2 cup of white sugar
1/4 cup of brown sugar
Mixing in air
2 large tbsp. of molasses
tsp of lemon juice
1 tbsp. of milk
1/2 cup of butter
1/4 cup of olive oil
Cream this all together until smooth and creamy
2 tsp of baking soda
2 tsp of ginger (if you really like ginger then make it 3 tsp)
1 tsp of cinnamon
Cream into mixture until smooth
2 and 1/4 cups of all purpose flour
Mix together well
Candied ginger, chop it up into small pieces like if they were chocolate chips is the size you are looking for. I cut up about 1/2 cup of the pieces
Add them to the mixture, mix well.
Then take a tablespoon and scoop out dough, roll dough into balls, get some white sugar and roll the balls in the sugar until the balls are all covered then place balls on baking sheet that has been lined with baker liner. Flatten cookies with a fork. Then put cookies into oven.
You needed to pre heat oven to 350 F . Once oven is at the heat, then place sheet into oven and cook for 10 minutes, take out and let sit on tray for 5 minutes then move to rack or plate to finish cooling. It should make around 2 dozen but it does depend on the size of your balls.
