Easy simple Italian meatball meal

There are days when your so run down and tired or like me right now sick because of getting pneumonia so no energy to do much. However cooking is relaxing. So even when I’m sick I still like to cook but meals need to be very simple.

Ingredients and directions:

Start with a salad:

Rip apart a head of Boston lettuce, wash and put into a salad serving bowl

Then wash some spinach and arugula and throw into the salad bowl toss all together

Dice up and throw on top of the lettuce mixture, cucumbers, celery, cherry tomatoes, green peppers and spring onions, sprinkle with some pepper over salad

Make a simple oil and vinegar dressing, I use 3/4 cup of good olive oil, 1/4 cup of a white wine or white balsamic or apple cider vinegar and 1 1/2 tbsp of a spicy mustard mix well together

Next I usually make my meatballs with herbs and veal and a few breadcrumbs but because of not being well, this time around I bought per-made veal meatballs from a butcher or you can get them from a grocery store

Preheat your fry pan with olive oil, I usually heat around 6 but when ready to cook, turn down to a 4, I give the pan 2 to 3 minutes to warm up,

Once warm throw in 4 finally diced garlic cloves and 1 medium red onion cut up into chunks

Heat for a few minutes don’t let them burn stirring a lot, then add a 1/2 cup of Rosa wine, I use a semi sweet wine, throw in 1 tbsp of parsley, 2 tbsp of basil and add your veal meatballs into the mix

Let veal meatballs brown 3 minutes each side, then add 1, 28oz can of dice tomatoes and stir all together

Get mixture to boil and then turn down to low and keep an eye on it, stirring it often, I let it simmer for 1/2 hour before serving

If running out of liquid then you can add water that you use to boil pasta in

So put on a big pot of pasta, use your favourite for this recipe, I like to use gemelli because it holds the sauce better thus it enriches your tastebuds experience

Once the sauce is ready, then I cook the pasta as it takes 10 minutes

Once pasta is cook I get a big warm serving bowl, drain the pasta and put into bowl gentle pour sauce over pasta tossing it all together it is at this moment if sauce seems to dense then I would add a spoon full of pasta water into the bowl mixing and stirring it in

I like this sauce, to be a bit fluid, but not too much

Serve with warm bread and grated mozzarella cheese


Note: If you want this to be vegetarian meal, then leave out meatballs or substitute veal meatballs for vegetarian balls, you can get either vegetarian ground meal or per-made vegetarian balls at the grocery store. Since we have both meat lovers and vegetarian lovers in our house, then I make sauce without the meatballs in it, I fry meatballs by themselves in good olive oil for 3 minutes a side browning the meatballs, I also do this for vegetarian balls as well, then I get two oven proof dishes I take a little sauce and put a little sauce on the bottom of dishes, then place balls into the dish cover and let them sit in oven at 300 until ready to put dinner together. Once ready to serve then instead of mixing the balls into the pasta sauce I just place some balls on top of the pasta and serve
