Box cake into a moist delicious cake

You know when your busy, planning a party, or sick and don’t have the energy to make a cake from scratch, or making a kids party and for whatever the reason you decide to make a box cake.

When it’s done it’s okay but your disappointed with the results. The picture on the box looks so much tastier than yours. Well, this is where I can help.

So I had a box cake sitting around.

So here’s what I do, to make it nicer, more moist and stronger tasting. This one was a devil’s food cake, by Betty Crocker.

So open the box, take the bag inside the box and put it into your mixing bowl. Preheat oven to 350. Make sure rack is in middle of oven.

I have a kitchen aid so as I said I put the bag contents into bowl and use the mixer and beat the dry contents forcing air in for at least 5 to 10 minutes. Longer is always better.

Then I add 1/2 milk and 1/2 water, so whatever the amount they ask for on the box. I keep mixing as well. Next the box asks for oil, I use olive extra virgin oil and good quality, as quality counts (if you don’t have olive oil you can use sunflower, avocado, or grape oil don’t use cheap vegetable oil most box cakes ask for). Now I add some extra flavour since this is a chocolate cake, I add 2 tbsp of good Dutch cocoa and today I decided to add 1/2 cup of dark chocolate chips to the mix. Then add the eggs keep beating. Stop the beating and scrape the sides and bottom, then begin beating again. Beat until oven is ready.

I used to 8″ round metal pan, I spray them will Pam.

When oven is ready take batter over to pans and divide between them equally. Then place pans in the oven on middle rack for the duration asked on box.

When done remove from oven run knife around edge to loosen cake and turn cake out onto plate.

Now since it is chocolate I decided to ice with white chocolate. So I take 1/2 cup of white chocolate and a big dollop of butter melt about 1 min in microwave. Bring it out and stir until the white chocolate and butter are combine creating a smooth spread, I first ice between the two cakes, then place the next layer on top repeat icing recipe and ice the top and side of cake, then put 1 large white chocolate piece in middle of cake. Get good quality dark chocolate bar, don’t need a lot and grate the chocolate over the top of the cake.

Now you have a much nicer box cake that people will be impressed by as it won’t taste like a box cake.

Note say your making a vanilla box cake, add a 1tsp of vanilla extract instead of the cocoa, if orange cake add 2 tbsp of orange marmalade, and so on.
