Banana Chocolate Muffins

You could make this also as bread instead of muffins.


1 ½ cups (375 mL) mashed ripe banana (3-4 bananas) very ripe are better for this recipe

1/4 cup granulated sugar

½ cup (115 g) sunflower oil,

2 large eggs

1 tsp (5 mL) vanilla extract

2 cups (260 g) cake and pastry flour

½ cup (60 g) Dutch process cocoa powder

2 tsp (6 g) baking powder

½ tsp (2.5 g) baking soda

3/4 cup (250 mL) chocolate chips

1/2 cup of milk

12 white large chocolate chip

36 pieces of walnuts

So in my kitchen aid in put my bananas in, if really ripe then throw into bowl and start beating, add sugar, continue to mix, add oil continue to mix, add eggs and vanilla continue to mix, add cocoa, baking powder, baking sofa and mix, the mixture should be smooth and creamy, then add pastry flour, the batter will be thicken but smooth, add 1/2 cup of milk might need more want batter to be smooth and fluid like cake batter, once you have the batter to your liking add chocolate chip, I use dark chocolate.

Warm oven to 350 F. Make sure rack is in middle position.

Next make raffle like spread for muffin middle.

Ingredients: for taffy like sauce

½ cup (125 mL) blue agave syrup

1/8 cup (50 g) packed light brown sugar

½ tsp (2 mL) vanilla extract

1/2 cup crushed walnuts

In small bowl put agave syrup and brown sugar mixing well until very smooth, then add vanilla mixing well.

Now get muffin tray spray with Pam each muffin holder, then put 1/8 of batter into each muffin holder, then put a small scoop of taffy like sauce on top of the batter sprinkle some crushed walnuts on top of the taffy like sauce then top with a dollop of dough, making sure dough covers the top, then put 3 walnuts in middle of muffin topped with 1 large white chocolate chip.

Place on middle rack and bake for 25 minutes. These are not very sweet but they are oh so good. Great breakfast muffin.
