Mommas Beef Stew

I throw all these ingredients into my crockpot, turn it onto high and cook for 8 hours, after six remove potatoes and beef and cut into small pieces. If you like a bit of a crunch to your celery then add it at the 6 hr mark instead of at the beginning. Note, you can also add the peas at this point as they don’t need as long as the other items.


2 lbs of boneless beef chucks

2 tbsp butter

3 tbsp olive oil

6 carrots peeled cut into chucks

6 potatoes peeled cut into chucks

2 onions peeled cut into chucks (red and sweet white)

1/4 cup of all purpose flour

1/4 of dry parsley

1 tbsp of thyme

Salt and pepper

1 cup of beef broth

1 cup of chicken broth

2 cups of water

1 can of 440 ml stout Guinness beer
2 cups of frozen peas

2 bay leafs

9 garlic cloves finely chopped

1 cup of dry red wine

1 cup of diced prunes

1 can, 156 ml, of tomato paste

2 to 3 chopped celery sticks

Serve with fresh bread and salad, top the stew with a dollop of sour cream when serving. Enjoy. Everybody will enjoy this stew. So give it a try.
