This is so simple, yet so tasty.
2lbs of cherry tomatoes, washed and cut into twos
1/2 cup of extra virgin oil
1 cup of dry white wine
3 tsp of cayenne pepper
8 garlic cloves, finely diced
2 tbsp of dry basil or if fresh about 15 leaves diced
Salt and pepper
Pinch of salt
1, 156 ml can of tomato paste
4 large mushrooms, diced
Get frying pan put oil, tomatoes, mushrooms and garlic in fry on medium for about 5 mins, then add rest except for tomato paste.
In a large pot boiling water, then add pasta once water is boiling. Cool pasta the way you like it, I cook between 8 to 12 mins depending on type of pasta.
Now if you like running sauce then don’t add tomato paste but my boys like there pasta sauce thick, so I add paste to sauce once pasta is ready. The sauce should be very thick so I add a cup of pasta water to sauce to smooth it out. Then I add pasta to pan and make sure pasta gets all cover. Depending on how thick the sauce became you might need and extra cup of pasta water.
Once pasta is all covered with sauce, then serve. I serve this with a baguette. You can serve some grated Parmesan cheese or other grated cheese to go with dish or leave plain. Both ways with or without cheese are scrumptiously delicious to the last bite.
