Chocolate Cake

So yummy, your tummy will be begging for more.

Preheat oven to 350 F, spray two round 9″ cake pans

Cake Ingredients and Directions:

3/4 cup of Dutch cocoa powder

1 cup of white sugar

1/2 cup of brown sugar

Place these three ingredients into mixing bowl, beat for five minutes. Then add:

1 1/2 tsp of baking Soda

2 eggs

1 cup of milk

1tbsp of white vinegar

1/2 cup of olive oil

1 tsp of vanilla

1 cup of hot coffee

Mix scrapping sides and bottles of bowl, mix for 8 minutes, mixture should be smooth, but runny.

Finally add:

1 3/4 of all purpose flour, in 1/2 cup increments until all is added and it is smooth and thick, mix for another 4 minutes, then divide batter between two round pans evenly. Place in oven on middle rack and bake for 35 minutes. Remove from oven once cooked leave in pans on top of stove for 5 minutes then place dish on top and flip, cake should fall out of pan onto plate. Let sit for another 15 to 20 minutes before icing.

Icing Ingredients:

Chocolate Butter icing

1/2 cup of melted butter, half salt butter

1 3/4 cups of confectioners’ sugar

1/4 cup of Dutch cocoa powder

2 tbsp of coffee cream

1 tsp of vanilla

In mixing bowl place sugar, cocoa powder and beat for five minutes then add, vanilla, coffee cream and melted butter to mix and beat. It should be thick, not runny, if you find it not thick enough then add 1tsp of cream of tartar to mixture beat until smooth and thick.

When ready to ice cake ice bottom layer top first, then place top layer onto top of bottom ice layer. Then ice top of the cake and finish with icing sides of cake. When all iced place cake in fridge for 1/2 hour before cutting into.
