Moms Irish Beef Stew

When I make stew I like to be able to throw all my ingredients into my crockpot and leave it to cook.


  • 3 tbsp olive oil
  • 2.5 lb of stewing beef
  • salt and black pepper
  • 6 garlic cloves , slice into long slices
  • 2 medium onions , chopped (red and sweet white)
  • 3 slices of thick bacon, cut into chucks
  • 3 tbsp all purpose flour
  • 341ml/ Scotch Ale du Nord by Boreale a strong ale with caramel iced taste, subtle smokiness and sweet finish
  • 1/2 can of tomato soup
  • 4 cups / beef stock/broth
  • 3 carrots , peeled and cut into chucks
  • 2 large celery stalks , cut into chucks
  • 3 bay leaves
  • 3 tsp of thyme
  • 6 potatoes peeled and cut into chucks
  • 1 leek washed and diced
  • Two cups of either broccoli or cauliflower washed cut into chucks

I throw everything but the flour into my crockpot put onto high cook for seven hours. I stir the stew each hour. When it’s down to the last two hours, I mix the flour with water until smooth and then add to stew stirring until it’s mixed into the stew.
