To die for scones
Need to serve with jam, or lemon curd topped with whip cream unless you happen to have Devon’s cream handy.
2 cups of all purpose flour
1/4 cup of white sugar
3 tbsp of lemon juice
1tbsp of baking powder
1/2 cup of whipping cream
1/2cup if melted butter
In a cup mix about 2 tbsp of cream and a 1 tbsp of white sugar
Now in kitchen aid, I mix butter, cream, egg, baking powder and sugar. Once creamy I mix in the flour and add the lemon juice. If looking a bit runny add a little flour. The dough shouldn’t stick, it should be soft.
Preheat oven to 425 on a cookie sheet using a cookie scooper small, I take two scoops and roll then together into a ball. I place on baker sheet on a cookie tray. Then with cream and sugar in cup using a pastry brush, brush each top of dough with mixture. Then bake for 14 to 15 minutes until golden brown. Make sure to bake on middle rack.
