Cornbread Muffins


2 eggs

1/8 of brown sugar

2 tbsp of creamy honey

3/4 cup of milk – 2 %

1/2 cup of olive oil

1 tbsp of baking soda

1 1/4 cup of all purpose flour

3/4 cup of yellow cornmeal


Using mixer, mix ingredients in the order they are listed above. Cream the first two then add each one making sure to cream each with previous so that mixture ends up being smooth and well mixed. Once all mixed together, spray muffin pan that has 12 slots, scoop out 1/8 of mixer into each muffin slot. Preheat oven to 350 and bake for 20 to 30 minutes.
