Crockpot heaven, 3 easy meals

If your like me from time to time you need your crockpot to get a meal ready on time. Or this time around I need my crockpot because my @LGCanada stove broke down again. So here are a few recipes that can easy be done in the crockpot.

Chilli and all time favourite

Ingredients

  • 1 tablespoon olive oil
  • 1 medium red onion -diced
  • 1 pound 90% lean ground beef or if your vegetarian then use a meatless ground
  • 2 1/2 tablespoons chili powder
  • 2 tablespoons ground cumin
  • 1 tablespoon of Dutch cocoa
  • Several celery sticks with leafy tops, dice including leafy tops
  • 1 cup of red wine
  • Small can of tomato paste
  • 2 tablespoongarlic powder
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground cayenne pepper* -optional, I used it
  • 2 cups beef broth or if vegetarian then vegetable broth
  • 1 large can (28 oz) diced tomatoes
  • 1 (16 oz.) can red kidney beans, drained and rinsed
  • 1 can of baked beans with tomato sauce
  • 1 (28 oz) can of brown lentils
  • 1 (8 oz.) can tomato sauce

Mix all ingredients together cook on low for 9 hrs. Serve with sour cream on top and grated cheddar cheese. Plus either bread like a fresh baguette or a toss salad. Enjoy.

Another recipe is Italian chicken

Ingredients:

  •  2 small boneless, skinless chicken breasts pound thin generously salt, pepper and garlic powder on both sides
  • 1/2 cup of red wine and 1/2 cup of white wine
  •  1/4 cup extra-virgin olive oil
  •  1/4 cup balsamic vinegar
  •  Cooking string tie up a few twigs of Italian spices like oregano, Basile, marjoram or whatever you like laid on top of all ingredients making sure the sauce covers it
  •  2 teaspoons garlic powder
  •  1/2 teaspoon black pepper
  •  2 cups of cherry tomatoes — cut in half
  •  1 medium zucchini — or yellow summer squash – 6 asperges
  • 2 cups green beans — fresh
  •  1/3 cup freshly grated Parmesan cheese
  •  2 to 3 tablespoons chopped fresh parsley
  • Cook on low 7 hrs
  • When there is about 30 mins left to cook add in gnocchis and beans

Serve with bread and salad. Enjoy.

Carrot and Potato Soup

Ingredients:

  • 2 lbs of peeled and diced Russet potatoes 
  • 1 chopped medium red onion
  • 3 peeled and diced carrots 
  • 1 cup diced celery (2 stalks)
  • 2 (14.5 oz) cans low-sodium chicken broth or vegetable broth
  • Salt and freshly ground black pepper
  • 2 tablespoons of butter
  • 1 cup of Greek yogurt
  • 1 can of condensed milk
  • 1/2 cup of red wine or white wine

For later bacon bites and parsley

Place all ingredients into crockpot cook on high for 6 to 8 hrs, checking from 4 hrs on to see if potatoes and carrots are soft once they are use blender and purée up the mixture. I purée it, in small batches placing each batch into a large bowl, once all purée then you return it to the crockpot and continue cooking.

Serve with salad, bread, and crumbled bacon bites. Let people add bacon bites but before you serve top it with fresh cut up parsley. Enjoy
